Train Rides, Nerves, And Fake Chocolate Pudding

I know I have been MIA the past three days, and I am so sorry to leave you all hanging after posting daily before. Those of you who have been following my posts (and if you aren’t yet – WHY NOT???!) will know that I was traveling for two days as I had been invited to a function to give a speech on my bachelor’s thesis. So, naturally, I didn’t get to/have to do any cooking. I was positively surprised by the hotel I was staying at, as they served lactose-free and soy milk products with every meal – that is far from normal here in Germany.

I had to ride the train for 5 hours to get to the function on Friday, and yesterday, after successfully delivering my speech, I got on the train again to get home. However, instead of taking 5 hours, the trip took me 7 1/2. How is that possible, you ask? Well, my first train arrived late, my second train was cancelled, which meant I had to take another train, which in turn was late again, and, the final train I got into, arrived late also. It was a grand day to be using public transportation, I tell you!

I got home at 9pm (I left at 2.30pm, so there you go), and I was so very hungry. I fixed myself some zoodles, and, after sharing with my boyfriend, I was still so upset that I needed some dessert desparately. I looked around in the kitchen and decided to make something chocolatey, fruity, and as healthy as possible.

Fake Chocolate Pudding

  • Servings: 1
  • Difficulty: very easy
  • Print

  • 1 banana (overripe)
  • 1 avocado
  • 3 tsp. raw cacao powder
  • 2-3 tsp. maple syrup (depending on how ripe your banana is, you may need more or less)

1. In a mixer, blend the banana and avocado together.

2. Add the cacao powder and maple syrup, mix together until a smooth, creamy texture is achieved.

3. Fill into a bowl (it may serve two if you aren’t as famished and upset as I was yesterday). Garnish with some shredded coconut and berries, if you wish.

…and, garnish with some raspberries and shredded coconuts:
