Today marks a very special day. Well, more like a special month, but either way, it’s special. 11 months ago, I started my “A year of salads” category, and have since posted 11 salad recipes – one for each month. There have been some recipes which you may have approvingly nodded at, as it didn’t seem too far-fetched to combine said ingredients. But I’m sure there have also been those that you raised your eyebrows at, thinking there was no way that would ever taste good. Am I right?
Well, this last salad is most likely one you’ll raise your eyebrows at, as it’s not at all intuitive. I mean, who puts radish and artichokes in the same salad as white beans?

Hello my friends, I’m back! I know it’s been very quiet the past 2 weeks, but I was at a kid’s camp as a supervisor, and a million other things were happening on the side. I loved it all, though – I feel like being cut off from the internet for 10 days has hit a “reset” button in every way, and I haven’t felt as refreshed and ready for life in at least a year! I am busting with ideas for the blog, I am even thinking about a new lay-out, and I am oh so ready to start posting again. This month’s salad may come as a bit of surprise. It would be logical to have a salad featuring seasonal berries, a salad that is light and according to the temperature. I wanted to do things a little differently for my “A Year of Salads” Category this month, though, and opted for a filling, satisfying salad that can easily be swapped out for a whole meal. No berries, no fruits, just simple, down-to-earth ingredients, that will fool you into thinking you’re not even eating a salad bowl, but a really huge lovely bowl of roasted goodness.

This one is a side salad, and, while sounding simple, is fantastically flavorful, resfreshing, and packed with vitamins and sweetness! As the weather is getting increasingly better, and warmer, I find it’s better to eat less filling, but more hydrating! It’s better to eat more and get your liquids than eat less and forget to hydrate, especially when it’s hot out!
