Product Review: Glutenfree Goodies

I got the coolest present for my birthday: my mom is giving me a selection of new foodie products throughout the next year, sort of like those “foodist box”-orders you can make. Only much cooler, as there is a LOT more stuff coming my way and it’s carefully picked out according to my personal dietary needs. Did I mention my mom rocks?

Anyhow, that’s why I’m sharing yet another product review with you, and I have a feeling there will be quite a few of these coming at you. Not all of today’s products are from the birthday present, but all of them are glutenfree, which is why I titled these “Glutenfree Goodies”. Duh.

Glutenfree Rainbow Hummus Tacos

I’m in a mood. Seriously. I don’t even know how my boyfriend is dealing with me today. I’m feeling so incredibly crabby that I can’t even be bothered to think about how to get out of it. It may have something to do with the fact that I am fed up with feeling this tired. I go to bed super early, wake up after 8-10 hours of perfect sleep and feel exhausted and less than motivated. I just have no idea what’s going on there.
At first, I thought it was just because I’ve had a very tireing year. But that school year ended almost 6 weeks ago and I don’t understand why I feel so depleted at the end of my summer break. Any ideas?

How to become a teacher – reflecting teacher’s training

When you ask kids in fifth grade what they wanna be when they grow up, their answers usually vary between “police officer”, “firemen”, “pilot” and perhaps the girls will occasionally admitt to “princess”.

When I was in fifth grade, all I wanted to be was a teacher. Preferably one like the one I had in fifth grade, a teacher who will forever be my role model in teaching, connecting with students, and being an awesome human.

I am now in teacher’s training – and still, all I want to be is a teacher. Not become one, be one.

Single Serving Toasted Muesli Bowl

What do you do when you have no more baked granola in the house? You have two options. Either you make some, and have to wait 40 minutes until it’s all done, or you can make this 10 minute toasted muesli, needing no oven! I always try to work around using the oven when I’m not at home, as the oven in my apartment in my work town SUCKS. It is seriously the worst oven I have ever had, as it only heats partially and everything I make seems to either end up uncooked or burnt.

Green Spinach Avocado Salad

I have been sitting in front of my empty screen for about 15 minutes because I feel like my brain is asleep and has no amazing insight in my life to share. I am, honestly, simply pretty tired. The past weeks have been continuously kicking my butt, which is fine, because somehow I am still managing, but to say that I’m looking forward to the Christmas break is an understatement.

Planning and being organized is seriously the only thing keeping my head above the water these days. I am so glad I am a good planner, and am able to kick my butt to do the work I need to do almost always, as otherwise the work would be piling up in no time! Planning well includes meal prepping for me, as I’ve told you in this post before.

Let’s Celebrate: Free Cookbook Download

Whooooppppdeeeedoooo! It’s hitbycoconuts’ birthday today!

A year ago, I started this blog, after actually just playing around a bit online, looking for a way to distract myself from the impending exams. I wanted to keep it a secret from my friends and family, felt a little like it was something “embarrassing” I was doing. But, when the first of you (non-related) guys started following me, I felt so thrilled and thankful that I had to keep going.

Birthdays are my favorite days, which is why I find it so awesome that my blog’s birthday is today! And, as is usual on birthdays, I also have a little present…for you. Oh wait, that’s the wrong way around, but who cares, I figure it’s you guys who keep this blog alive, so it’s time to shower you with…uhm…1 gift. 🙂

Track It Tuesday: Comfort Food

It’s Tuesday, and that means you get to “follow me around” for another day, and I’ll keep you posted what I’m eating. I have had serious cramps ever since the weekend, so this week has not started off very good for me. My boyfriend’s also travelling (currently in Hungary because of work), so I’m all by my lonesome self. If that doesn’t call for some serious comfort food, I don’t know what is!
