Creamy Coconut Milk Porridge

I’m in a mood. My boyfriend says I’m feeling the November rain – whatever that means. It has been raining a lot this past week, and it has been quite grey and icky outside, but I don’t know if that’s it.

I just don’t feel well. I’m not ill, but somehow my body’s hurting and I’m extremely tired and I feel as icky as the weather is. Oh, and my knee hurts. And did I mention my nails keep chipping?

Banana Raisin Walnut Oatmeal

I’m sitting here after a one-hour nap, slurping on some peach roiboos tea, feeling lonely and grumpy. What a way to start a blog post. Honestly, this week just really hasn’t been my best. I feel like this month actually hasn’t been my best. A week ago yesterday, I had that big graded lesson test thingy that I wrote about a few times, and since then, I have been struggling to get back to “normal” energy levels big time. And I am realizing why that might be.

Dreamy Carrot Cake Overnight Oats

The main reason people make overnight oats is because they want to save time in the morning. Right!? Well, I have come up with an overnight oat recipe that doesn’t really cut the “throw-together-in-2-minutes” thing, but the few extra minutes you spend will be incredibly worth it. I have come up with the best, and I seriously mean THE best overnight oats. Carrot Cake Overnight Oats. Yes. It’s true.

And this isn’t your standard knock-off that pretends to be delicious eventhough it’s healthy and really doesn’t taste like the real thing at all. These overnight oats are as much the real thing as carrot cake is…if that makes any sense at all.

Overnight Macadamia Oats

I was thinking about calling this recipe “Overnight nutpulp oats”, but the more I looked at it on my screen, the more I realized that “nutpulp” is a terrible word. It just doesn’t really imply something delicious, at least not to me. So “Overnight macadamia oats”, while describing the exact same thing, was the better choice for naming this wonderful breakfast.

Those of you following my instagram will have seen a picture of a huge cup of coffee creamed with homemade macadamia milk on Tuesday…and while I haven’t made it in a while, it is really something I sincerely love. There is just something so comforting about homemade nutmilk, as you can make it as thick and creamy as you like! The only problem is that you’re left with nutpulp that seems too good to throw out. Hence: Overnight nutpulp…uhm macadamia oats.

Single Serving Toasted Muesli Bowl

What do you do when you have no more baked granola in the house? You have two options. Either you make some, and have to wait 40 minutes until it’s all done, or you can make this 10 minute toasted muesli, needing no oven! I always try to work around using the oven when I’m not at home, as the oven in my apartment in my work town SUCKS. It is seriously the worst oven I have ever had, as it only heats partially and everything I make seems to either end up uncooked or burnt.

Bircher Muesli Overnight Oats

The other day, the unspeakable happened. I can’t even believe I’m admitting it. But it did happen.

I ran out of bananas.

Yes, I admit it. I didn’t want to go to the grocery store to only pick up bananas, but not having ANY is something that rarely happens in my kitchen. For me, “a banana a day keeps the doctor away” is the adapted mantra.

Green Matcha Vanilla Overnight Oats

I have had matcha powder sitting around in one of my kitchen drawer’s for a while, well, ever since I bought it, actually. I made myself a matcha latte once or twice, but I don’t really get the hype, to be honest. I used it in a few smoothies, but I have to admit that I’m drinking less smoothies now that it’s getting colder, so my matcha supply hasn’t really been diminished. Now that I have come up with this beautiful recipe, though, that may change…get your hopes up alright, people, because I have a new favorite breakfast to share!

Peanutbutter Cup Zucchini Oatmeal Bowl

Good Morning, friends! It’s the start of a new week, and I heading back into “normal” life after a week off from school. I am actually excited and kind of glad, even if that may seem strange to you…but, what can I say, I love having a routine, and having a structured day. It’s what I was craving throughout the time I was at university, actually. Having a new schedule every term, and not following a certain time frame daily (9-5) definitely has its perks, but, especially towards the end, I was so looking forward to going to work right after I wake up, actually having to leave the apartment/house to do so, and then coming back after work is “done”.

Then I became a teacher and realized work is never done, but, you know, I still get to leave the house and come back. It’s all about seeing the positive in life, I swear. 🙂 Which brings me back to this beautiful new week, and the right breakfast to accompany a perhaps gloomy Monday.

Warming Autumn Oatmeal

As of today, I am officially freezing. Everybody warned me about the icy temperatures around here, but it turns out I wasn’t prepared after all…at least not for it to be this cold in October! Which is all the more reason to have tea and coffee (or any warm drinks for that matter) throughout the entire day, and wear a big woolly scarf to go along with it.
The only positive result that comes with cold weather is the fact that I am craving warm breakfast bowls again – it’s all about the smoothie bowls when it’s hot, and about the oatmeal when it’s cold. I therefore am officially ringing in the oatmeal-season with my “Autumn Oatmeal” that is sure to fight off any cold temperature crisis you may be having.

Tahini Honey Oatmeal

Okay, so what I’ve noticed is that if I blog non-recipe posts, people aren’t that interested. It’s something I’ve solely deduced from the amount of likes on a post, and it seems that my Track it Tuesday posts, for example, aren’t that big a hit. I’m a bit disappointed, but hey, if it’s recipes you want, it’s recipes you’ll get!!!

It’s starting to get colder, and so the time for hot and sexy oatmeal bowls has officially started! I figured I’d treat you with a very special one this Monday morning…because who doesn’t need something special at the beginning of the week!?
