My parents’ garden is dehydrating. Big time. Even though I am trying my best to keep it alive, the tomatoes’ skin is literally burning off and the sunflowers are wilting. I can’t stop it! Which just goes to show: This weather is NOT good. I seriously can’t deal with the heat. It makes me angry and I don’t know how people actually say they enjoy it. I just really don’t like the constant sweating and dehydration going on. In both plants and myself.
Which is why I needed some cooking or baking to get my mood back on track. Why can’t there be “cooking weather” instead of “heat” or “summer weather”?

I just spent an hour trying to reach an office that would be able to explain to me why my doctor’s bills haven’t been covered by my insurance. Once I reached the office, I was informed very bluntly that I was missing one document. After I asked just one question about what that document should look like, I was treated like a stupid person, but you know what, I really can’t feel stupid after having to deal with all the crazy German bureaucracy paperwork stuff. How am I supposed to know what I should send where if there’s a million documents with words on them that I don’t understand?
I do feel a little stupid.

Last Saturday, my boyfriend and I were at a ball, organized by one of our friends with whom we used to take dancing lessons. We had a wonderful night, and I for one love dressing up and pretending to be a star for just one night! There is something seriously “grown up” about ballroom dancing, in my opinion, and I love being twirled around by my boyfriend (who happens to be a phenomenal dancer). Since our friend is the one who organizes this ball, we help clean up afterwards, which means that last Saturday I was up until 6 am. I feel almost proud! 🙂
Anyways, the next day, I was pretty out of it, logically. I was craving cake for breakfast (which we had at 2 pm on Sunday), and couldn’t decide whether going back to bed or ironing the laundry pile sounded more appealing (just kidding!). I opted for neither of the two, and made raw cookies instead.

During this time, it’s best to simply go with whatever we say, and, if in doubt, present us with presents or chocolate or flowers, or all of the above. During this time, it’s also best to NOT ignore your own sweet-tooth-needs, dear friends, as I know from my own experience that it won’t end well. I am not sure what it is, but if Aunt Irma is visiting me (that’s an “IT Crowd” reference, for those who of you who haven’t read this post) , I better not deny myself the chocolate I want, or else my mood directly plunges, or I go on the craziest chocolate binge shortly after, which results in my mood being downright deadly.

Last week, it was my mom’s birthday. I was pretty upset I couldn’t be there, but that’s just how life goes sometimes, I guess. I myself am very big on birthdays, and therefore I’m always upset when I can’t be there when other people are celebrating theirs…but, I made up for it this week. My present was that I cooked a 3-course meal for my mom, and I must say it was super special to spend one-on-one time with my mom like that. Turns out we haven’t done that in ages!
The menu I cooked was very allergy-friendly, as my mom suffers from quite a few food allergies. The menu is soy-free, nut-free, milk-free, glutenfree, refined-sugarfree, and it still tasted delicious. Don’t believe me? Have a look:

I thought about what I would name these cookies, and I had a difficult time deciding. Whenever you put macadamia nuts in cookies, and add the word “chocolate”, people think of white chocolate. White chocolate macadamia nut cookies, that’s a standard. Which is why I didn’t want to add the word, eventhough there is chocolate involved: as a drizzle on top, and it’s the good stuff, too (72% dark chocolate). Also, these are kind of oatmeal cookies, as I didn’t feel like using flour, or grinding the oats into a flour, or using more nuts as a base: therefore, oats it was. And, finally, I added vanilla protein powder, to make these babies even healthier. “Vanilla Protein Macadamia Nut Oatmeal Chocolate Drizzled Cookies” seemed too long, especially had I added that these are both vegan and sugarfree. Oh, the problems of a food blogger. 🙂

The first day back at school is a big deal for all kiddos, even if they pretend that it’s not (and rather, kind of a drag). The first day back at school after 5 years, however, is a HUGE deal. And that’s where it’s at today, for me! I am finally starting my teacher’s ed years, and I am beyond psyched, nervous, giddy, happy, proud. Which called for some celebratory cooking…and, as freezer fudge is the next big thing, it seemed logical to prepare it for such a momentous day.

So I have been trying to bake a vegan cheesecake without a cashew or other nut filling for at least 4 months. I have tested coconut milk, soy yogurt and a few other concoctions I really don’t want to revisit, and, while there has been one version that was at least edible, I have not been successful. It’s just one of those recipe experiments I have put to rest, simply because it’s too frustrating! In fact, I haven’t felt the need to bake a cheesecake for a few weeks! I am so worried these days, and I just can’t seem to turn it off. It’s great starting my life as a “working citizen” soon, but with great privilege comes great responsibility, and I just can’t deal with all that responsibility that well (yet). I think it’s all this talk about insurances, future house building plans, children, etc. that is kind of getting to my nerves. Sometimes I wish I could just take a look at my life in 5 years, then come back to the present and know everything is going to end up being perfectly fine. Anybody invent a time machine yet?

Eventhough it hasn’t been a particularly warm day, I was really craving nicecream today.
