I had the great idea of doing a freeletics workout this summer. I tried to get into it, but I would be lying if I said I actually enjoyed it. I was usually glad when they’re over and I’m a tad embarrassed that I felt that way doing the “Endurance” level, which is the easiest level. As in, I’m not even doing burpess, but sprawls, and had an incredibly hard time while doing so. And here I thought I was actually sort of “fit”.
Doing freeletics is one thing, but doing it when it’s 35°C outside is another. It was so incredibly hot this summer and for some reason I just get really crabby when it’s too hot. know, I should be stoked, but, I don’t know, it just makes me feel all icky and sweaty and puffed up, for whatever reason.
Now it’s getting colder and I am starting to crave a little warmth again. I guess there’s really no way to be satisfied with weather, is there?

I’m in a mood. Seriously. I don’t even know how my boyfriend is dealing with me today. I’m feeling so incredibly crabby that I can’t even be bothered to think about how to get out of it. It may have something to do with the fact that I am fed up with feeling this tired. I go to bed super early, wake up after 8-10 hours of perfect sleep and feel exhausted and less than motivated. I just have no idea what’s going on there.
At first, I thought it was just because I’ve had a very tireing year. But that school year ended almost 6 weeks ago and I don’t understand why I feel so depleted at the end of my summer break. Any ideas?

After what feels like the longest break I’ve ever taken from the blog, I’m finally sitting down to write up one of the recipes I’ve had stored up and just haven’t had the time or energy to write up for you. So sorry about that, but just read my previous post to know what my excuse is – moving 280km back home turned a lot upside down for me, and while I now know that I won’t be moving anywhere else anytime soon, it still hasn’t been the easiest month.
As I’m trying not to dwell on it, though, let’s just get to the recipe and get this blog started again. Without further ado:

I’m feeling extremely queasy today, and I honestly don’t really know why. I think it has something to do with low blood pressure and crazy weather outside. I swear we’ve been jumping from downright pouring outside to sunniest, cloud-free sky 5x within the past 2 hours. It’s annoying, really, and I blame the weather for making me feel so tired and out of it.

So, do you want to know what my typical day looks like at the moment?
5.30 am: Wake up, roll out of bed, somehow manage to do 1/2 hour of yoga
6.30 am: Have breakfast (see instagram)
7.05 am: Leave the apartment to walk to school.
7.45 am: School. Deal with crazy students.
9.15 am: Breaktime for students. Deal with more crazy students.
11.15 am: Second breaktime for students. Why do students get so many breaks!?
12.00 pm: Only 45 minutes left of crazy students.
12.45 pm: Crazy students leave. Eat lunch for 15-20 minutes, while wildly tapping around on my laptop’s strangely dirty keyboard, writing up some pop quizzes for crazy students. Continue reading Quinoa Stuffed Tortilla Wraps
I was really craving pizza the other day, but didn’t feel like going on and on making the crust in an oven that barely works. Plus, I rarely feel good and energized after pizza; sadly, it does always leave me feeling quite heavy. I wasn’t in the mood for that, so I searched my fridge for an alternative. Just as I was about to give up…drumroll, please…I came up with the easiest, quickest, plant-based pizza alternative you could think of. And you can make it without an oven, which is truly perfect for anyone in my shoes.

When you have left-over cooked rice in your fridge, there is only one thing to do. Well, two things. You could a) make a yummy stir-fry with some veggies and sriracha or b) you could make pizza. I personally love option a), but am glad I now have option b) for those nights I really wish I could simply order pizza to make my life easier.
This pizza crust is not as doughy as a crust made from wheat, but it is just as satisfying and has yummy crunchy edges. It is super satisfying for anyone who isn’t able to have wheat-based pizza, and perhaps can’t even deal with spelt or rye. This is 100% glutenfree, vegan, yeast-free and soy-free. And yet tastes just like…pizza.

I have tried going vegan before – those of you who have been following me since the beginnings of hitbycoconuts might remember that. I started hitbycoconuts as a result of disovering a lot of food allergies and intolerances, and as I was trying to reorganize my eating according to what I was allowed and mostly not allowed to eat, I thought I’d give vegan food a try. I have a few friends who had gone vegan for various reasons the years before and who all experienced veganism’s benefits quite immensely. I therefore thought I’d give it a try and was hoping to feel the same amazing change in energy, body-feeling etc.

There’s just something about pasta that makes me happy. I am not sure what it is, maybe simply because CARBS, but nothing has ever made me happier. Even as a child, when my mom cooked up a pot of spaghetti with a bolognese sauce, I’d be a happy camper. When I graduated from high school, I was allowed to decide what we’d have for lunch that day…and pasta it was. How can something so simple make life so perfect!?

I love the title of today’s post. It’s just so fun to say! Try it. Like five times. Do you get what I mean? 🙂
I have been putting off writing up the recipe for this fun salad for three days, but really, there’s absolutely no excuse whatsoever. I have been feeling weary of everything the past few days, which is probably due to the fact that I had to go back to my apartment 300 km away from home, and I had gotten so used to being with my boyfriend. I’ve had the blues, guys.
But, this salad is a game changer. It just makes everything better, even just saying it.
