Glutenfree Rainbow Hummus Tacos

I’m in a mood. Seriously. I don’t even know how my boyfriend is dealing with me today. I’m feeling so incredibly crabby that I can’t even be bothered to think about how to get out of it. It may have something to do with the fact that I am fed up with feeling this tired. I go to bed super early, wake up after 8-10 hours of perfect sleep and feel exhausted and less than motivated. I just have no idea what’s going on there.
At first, I thought it was just because I’ve had a very tireing year. But that school year ended almost 6 weeks ago and I don’t understand why I feel so depleted at the end of my summer break. Any ideas?

Super Munchy Crunch Salad

I love the title of today’s post. It’s just so fun to say! Try it. Like five times. Do you get what I mean? 🙂

I have been putting off writing up the recipe for this fun salad for three days, but really, there’s absolutely no excuse whatsoever. I have been feeling weary of everything the past few days, which is probably due to the fact that I had to go back to my apartment 300 km away from home, and I had gotten so used to being with my boyfriend. I’ve had the blues, guys.

But, this salad is a game changer. It just makes everything better, even just saying it.

Green Spinach Avocado Salad

I have been sitting in front of my empty screen for about 15 minutes because I feel like my brain is asleep and has no amazing insight in my life to share. I am, honestly, simply pretty tired. The past weeks have been continuously kicking my butt, which is fine, because somehow I am still managing, but to say that I’m looking forward to the Christmas break is an understatement.

Planning and being organized is seriously the only thing keeping my head above the water these days. I am so glad I am a good planner, and am able to kick my butt to do the work I need to do almost always, as otherwise the work would be piling up in no time! Planning well includes meal prepping for me, as I’ve told you in this post before.

Easy School Lunch: Veggie Quinoa Toss

So my biggest problem at the moment is the fact that I am constantly reminded of the fact that I am not perfect. I know, it’s a little insane and irrational, but I feel like the longer this whole teacher-training-thing is going on, the more right I have to be insane and irrational. I am starting to get worked up over the tiniest mistakes – not because they are tiny, but because I am not a person who makes mistakes. Ever.

Especially not mistakes involving typos, or forgetting to change the date on a document I have to hand-in (and, before you get onto me about the typos, this blog is completely different! It’s not “work”). Anyways, I feel like I am losing control a little, which is one of the most important things for me. And, when I feel like I’m losing control in real-life, my peace of mind usually gets lost with it. So that’s where things are at right now.

The September Salad: The Ultimate Italian Salad

Today marks a very special day. Well, more like a special month, but either way, it’s special. 11 months ago, I started my “A year of salads” category, and have since posted 11 salad recipes – one for each month. There have been some recipes which you may have approvingly nodded at, as it didn’t seem too far-fetched to combine said ingredients. But I’m sure there have also been those that you raised your eyebrows at, thinking there was no way that would ever taste good. Am I right?

Well, this last salad is most likely one you’ll raise your eyebrows at, as it’s not at all intuitive. I mean, who puts radish and artichokes in the same salad as white beans?

The July Salad: Coconut Sweet Potato Salad

This month’s salad may come as a bit of surprise. It would be logical to have a salad featuring seasonal berries, a salad that is light and according to the temperature. I wanted to do things a little differently for my “A Year of Salads” Category this month, though, and opted for a filling, satisfying salad that can easily be swapped out for a whole meal. No berries, no fruits, just simple, down-to-earth ingredients, that will fool you into thinking you’re not even eating a salad bowl, but a really huge lovely bowl of roasted goodness.

Traditional, Creamily Dressed, Vegan Pasta Salad

I don’t recall ever having made a traditional pasta salad before. Of course, I have had pasta salad, and have even posted recipes (see my Lightened-Up Italian Pasta Salad or Greek Noodle Salad Bowl), but those were always a little spur-of-the-moment-left-over-ingredients-combined-awesomly. I am not saying these two examples of pasta salad are any less than tastily genius, but they are definitely not what I consider “traditional”. In my mind, a traditional pasta salad is, most importantly, tossed in a creamy, thick, insanely decadent salad dressing, and contains no leafy greens.

The Perfect Everyday Salad Dressing

Last night was my boyfriend’s grandma’ birthday, and she wanted to have pizza as a celebration. I guess she gets the world’s coolest grandma award concerning the served food at her party for that, as I can’t in a million years imagine my own grandma serving, let alone ordering pizza for her birthday! Way to stand up for what you belie…uhm…love eating!
