Glutenfree Rainbow Hummus Tacos

I’m in a mood. Seriously. I don’t even know how my boyfriend is dealing with me today. I’m feeling so incredibly crabby that I can’t even be bothered to think about how to get out of it. It may have something to do with the fact that I am fed up with feeling this tired. I go to bed super early, wake up after 8-10 hours of perfect sleep and feel exhausted and less than motivated. I just have no idea what’s going on there.
At first, I thought it was just because I’ve had a very tireing year. But that school year ended almost 6 weeks ago and I don’t understand why I feel so depleted at the end of my summer break. Any ideas?

Oil-free White Bean Hummus

I have tried going vegan before – those of you who have been following me since the beginnings of hitbycoconuts might remember that. I started hitbycoconuts as a result of disovering a lot of food allergies and intolerances, and as I was trying to reorganize my eating according to what I was allowed and mostly not allowed to eat, I thought I’d give vegan food a try. I have a few friends who had gone vegan for various reasons the years before and who all experienced veganism’s benefits quite immensely. I therefore thought I’d give it a try and was hoping to feel the same amazing change in energy, body-feeling etc.

Green Broccoli Pesto Pasta

There’s just something about pasta that makes me happy. I am not sure what it is, maybe simply because CARBS, but nothing has ever made me happier. Even as a child, when my mom cooked up a pot of spaghetti with a bolognese sauce, I’d be a happy camper. When I graduated from high school, I was allowed to decide what we’d have for lunch that day…and pasta it was. How can something so simple make life so perfect!?

Jump Start Day 2 – Set Goals

I am a little frustrated today. I was practicing my crow pose last week (that’s yoga lingo in case you are wondering what the heck I’m talking about) and fell for the first time ever, and I must’ve hurt my wrist in the process. It didn’t start hurting until New Year’s, but that’s the only way I can explain why my wrist has started hurting. It’s a bummer, because I am super motivated to continue to grow my yoga practice this year. Can’t do that with a hurting wrist, though…because seriously, how can you flow without your wrist? Nearly impossible.

Bircher Muesli Overnight Oats

The other day, the unspeakable happened. I can’t even believe I’m admitting it. But it did happen.

I ran out of bananas.

Yes, I admit it. I didn’t want to go to the grocery store to only pick up bananas, but not having ANY is something that rarely happens in my kitchen. For me, “a banana a day keeps the doctor away” is the adapted mantra.

So, what to do if  don’t have any, but still want to make overnight oats?

How to BBQ veggie-style (and not feel deprived)

The weather in Germany has been crazy warm and mild, considering it’s November. In fact, last week my boyfriend and I were invited to a barbecue, and I was very doubtful of it being outside beforehand. It turned out to feel like a mild summer night, with around 20°C in the evening! In November!? How weird. But not at all unwelcome, if you ask me…I’m not big on the winter months anyways. Could be because I spent my childhood sweating in a 40°C environment, but I could care less about winter and snow. Especially driving (and digging up your car beforehand) doesn’t sound too appealing to me, and luckily I haven’t had to actually deal with heaps of snow in a long time (we rarely get icy winters at home). But this year, I’ve been warned that I’m going to experience a “Siberian winter”…so 20°C-November, please just stick around as long as possible!

Vegetarian Birthday 3-course-meal

Last week, it was my mom’s birthday. I was pretty upset I couldn’t be there, but that’s just how life goes sometimes, I guess. I myself am very big on birthdays, and therefore I’m always upset when I can’t be there when other people are celebrating theirs…but, I made up for it this week. My present was that I cooked a 3-course meal for my mom, and I must say it was super special to spend one-on-one time with my mom like that. Turns out we haven’t done that in ages!

The menu I cooked was very allergy-friendly, as my mom suffers from quite a few food allergies. The menu is soy-free, nut-free, milk-free, glutenfree, refined-sugarfree, and it still tasted delicious. Don’t believe me? Have a look:

Yellow Zoodles With Vegan Tomato Pesto

Boy, am I having a slow start today. I haven’t really been sleeping very well – for whatever reason, I have woken up around 4 or 5 am the past two days, and not been able to fall asleep again properly. My boyfriend gets up at 6, which obviously wakes me even if he makes sure not to disturb me, and at 8 am the painters working on the walls on our house start (and I wouldn’t need to sleep past 8 if I were able to get some proper sleep before). Needless to say, it hasn’t been the best morning.

Super Simple Sundried Tomato Dip

This Sunday morning, my boyfriend and I went for a lovely picnic in the vineyards, as those of you following me on Instagram will probably have noticed already. His aunt wanted to share some of her own poetry, and had a few other friends who had some things to recite as well, so they made a little event out of it, invited family and friends, and we spent a few hours in the midst of nature, listening to poetry. It may sound strange or even a little boring to you, but I have rarely had such a peaceful morning!
