Bircher Muesli Overnight Oats

The other day, the unspeakable happened. I can’t even believe I’m admitting it. But it did happen.

I ran out of bananas.

Yes, I admit it. I didn’t want to go to the grocery store to only pick up bananas, but not having ANY is something that rarely happens in my kitchen. For me, “a banana a day keeps the doctor away” is the adapted mantra.

So, what to do if  don’t have any, but still want to make overnight oats?

Chocolate Hazelnut Banana Bread Cake

The title of today’s post is too long. I know this, but I honestly didn’t know how to shorten it anymore. Originally, I thought about naming this cake:

Chocolate Hazelnut Banana Bread Raspberry Coconut Cake.

But that would’ve definitely been too long. The title now is my compromise. If you have a better, idea, let me know in the comments, and I may change it.

Easy School Lunch: Veggie Quinoa Toss

So my biggest problem at the moment is the fact that I am constantly reminded of the fact that I am not perfect. I know, it’s a little insane and irrational, but I feel like the longer this whole teacher-training-thing is going on, the more right I have to be insane and irrational. I am starting to get worked up over the tiniest mistakes – not because they are tiny, but because I am not a person who makes mistakes. Ever.

Especially not mistakes involving typos, or forgetting to change the date on a document I have to hand-in (and, before you get onto me about the typos, this blog is completely different! It’s not “work”). Anyways, I feel like I am losing control a little, which is one of the most important things for me. And, when I feel like I’m losing control in real-life, my peace of mind usually gets lost with it. So that’s where things are at right now.

How to BBQ veggie-style (and not feel deprived)

The weather in Germany has been crazy warm and mild, considering it’s November. In fact, last week my boyfriend and I were invited to a barbecue, and I was very doubtful of it being outside beforehand. It turned out to feel like a mild summer night, with around 20°C in the evening! In November!? How weird. But not at all unwelcome, if you ask me…I’m not big on the winter months anyways. Could be because I spent my childhood sweating in a 40°C environment, but I could care less about winter and snow. Especially driving (and digging up your car beforehand) doesn’t sound too appealing to me, and luckily I haven’t had to actually deal with heaps of snow in a long time (we rarely get icy winters at home). But this year, I’ve been warned that I’m going to experience a “Siberian winter”…so 20°C-November, please just stick around as long as possible!

Green Mango Tahini Smoothie

Some mornings, I am not super hungry, so I only have some cashew-milk-creamed coffee and apple slices. Some mornings, I make oatmeal and go crazy with my toppings. And, some mornings, I really want a smoothie milkshake.

What’s that, you ask?

I have shared a dessert smoothie with you before, and this one falls in the same category…only it packs way more vitamins and fibre than said dessert smoothie. It tastes ridiculously decadent, is topped off with a huge dollop of whipped coconut cream, and looks super pirdy. And, it’s so healthy! I really should have this smoothie more often! And so should you.

2 Ridiculously Decadent PMS Snacks You Won’t Believe Are Vegan

Every month, women go a little crazy. We know it, the men know it, pretty much anyone in our presence will get to know it. During this time, it’s best to simply go with whatever we say, and, if in doubt, present us with presents or chocolate or flowers, or all of the above. During this time, it’s also best to NOT ignore your own sweet-tooth-needs, dear friends, as I know from my own experience that it won’t end well. I am not sure what it is, but if Aunt Irma is visiting me (that’s an “IT Crowd” reference, for those who of you who haven’t read this post) , I better not deny myself the chocolate I want, or else my mood directly plunges, or I go on the craziest chocolate binge shortly after, which results in my mood being downright deadly.

Vegetarian Birthday 3-course-meal

Last week, it was my mom’s birthday. I was pretty upset I couldn’t be there, but that’s just how life goes sometimes, I guess. I myself am very big on birthdays, and therefore I’m always upset when I can’t be there when other people are celebrating theirs…but, I made up for it this week. My present was that I cooked a 3-course meal for my mom, and I must say it was super special to spend one-on-one time with my mom like that. Turns out we haven’t done that in ages!

The menu I cooked was very allergy-friendly, as my mom suffers from quite a few food allergies. The menu is soy-free, nut-free, milk-free, glutenfree, refined-sugarfree, and it still tasted delicious. Don’t believe me? Have a look:

The Best Natural Flu Remedy Drink

This week seriously didn’t start too well for me. I drove back to my work-town on Sunday night after quite a blissful weekend at home, but I already had a runny nose and felt a little out of it. It all culminated in a night of laying awake because both my nostrils wouldn’t allow me to breathe, and I had the worst headache when I woke up on Monday morning. Somehow, I got through Monday, even taught a lesson, and kind of broke down health-wise when I finally got home Monday afternoon. You know when you’re so sick that your eyes start watering? That was me. I was waiting for people to ask me why I was publicly weeping all day.
