Glutenfree Rainbow Hummus Tacos

I’m in a mood. Seriously. I don’t even know how my boyfriend is dealing with me today. I’m feeling so incredibly crabby that I can’t even be bothered to think about how to get out of it. It may have something to do with the fact that I am fed up with feeling this tired. I go to bed super early, wake up after 8-10 hours of perfect sleep and feel exhausted and less than motivated. I just have no idea what’s going on there.
At first, I thought it was just because I’ve had a very tireing year. But that school year ended almost 6 weeks ago and I don’t understand why I feel so depleted at the end of my summer break. Any ideas?

Tomato Basil Grilled Cheese

Mondays have a worldwide tendency of being extremely sucky. Who knows why – because, seriously, the argument that it’s the day on which you still have the largest amount of work just doesn’t cut it for me. I think Mondays are so susceptible for general suckage (excuse my language) because they involve so much planning. You are forced to think about what you didn’t get done the previous week, and what you need to get done this week, what is coming up etc. It’s not about the work, it’s about the planning. At least for me.

Super Rich Dark Chocolate Loaded Walnut Brownies

My weekend was super busy! I had two Christmas concerts with my choir, which were both very fun, and very well received, but it really takes a lot of energy out of you (positively, of course) to get up in front of 200 people and sing your guts out. Nevertheless, it was so great to have so many people in the audience, and I really can’t complain! And, after all, today has been a very lazy, laid-back day, wholly devoted to rebooting our systems, and recharging our batteres. 🙂

Creamy Red Lentil Pasta Sauce (Vegetarian/Vegan Option)

I am procrastinating ironing a huge pile of clothes. Usually that’s my boyfriend’s job, and he normally does the ironing on Sunday afternoons, but, as were both singing a concert on Sunday, that didn’t happen. The pile has grown so large that every time I glance at it, it seems to look at me reproachfully, as if it is somehow my fault that it continues to grow (I mean, I guess it is my fault, but the more it grows, the less I want to start).

Nutty-Crunch Comfort-Oatmeal Bowl

I am so amazed by my toasted almond butter, I can’t even begin to tell you. I haven’t had the chance to try it spread out on bread, as I was kind of full of it after I had made it (someone had to lick the spoon…and the bowl…and the spoon again), but I slopped a spoonful on my oatmeal yesterday morning – and I truly don’t know why I haven’t tried nutbutter in my cereal before! It just adds this wonderful creaminess, and works especially well with this specific oatmeal bowl:

Monster Oatmeal Raisin Cookie-Cake-Pillows

I had cookies for lunch today. Or, well, maybe some would call it cake. Or something in between. I am not really sure how to describe them, but I think it may be more interesting to know why I had cookies for lunch? Honestly, I am not sure, I think I just skipped lunch and ended up hungry at 2pm, so I figured I might as well pretend it was tea time and made myself some freshly baked cookies. Fair enough, right?

Whole-Spelt Pasta Shells With Vegan Zucchini-Olive-Sauce Sprinkled With Vegan Parmesan

Oh boy is my title long, I had to proof-read it three times and am still not sure I spelled everything correctly. But, I am trusting my instincts, as I have been all evening in my two adult-classes. It seems like lately it doesn’t really matter how much I prepare my lessons, nothing ever goes as planned anyways. I don’t mean that in a negative way whatsoever, but today, instead of listening to an article reading and doing some exercises, we spent 30 minutes discussing the difference between “to remind” and “to remember”, and when to use “much” and “many”. I am a bit proud, I have to admit, to be able to just pull explanations out of my sleeves as we go along, and have yet to be taken aback by something in one of my classes.

Indulgent Double-Choc Dessertballs And Winter-Weariness

Being tired is so incredibly annoying. I absolutely despise feeling worn out, especially since it seems like I do so mostly throughout the day, and then, at night, I sleep very badly (or take forever to go to sleep). Either I have normal winter-weariness – I mean, it’s already getting dark and we just passed 3 pm) – or I have a bad case of chronic stressed-outness. I am, obviously, hoping for the first option!
