Dreamy Carrot Cake Overnight Oats

The main reason people make overnight oats is because they want to save time in the morning. Right!? Well, I have come up with an overnight oat recipe that doesn’t really cut the “throw-together-in-2-minutes” thing, but the few extra minutes you spend will be incredibly worth it. I have come up with the best, and I seriously mean THE best overnight oats. Carrot Cake Overnight Oats. Yes. It’s true.

And this isn’t your standard knock-off that pretends to be delicious eventhough it’s healthy and really doesn’t taste like the real thing at all. These overnight oats are as much the real thing as carrot cake is…if that makes any sense at all.

Sunshine Smoothie Without Greens

The “Green”-Hype has been crazy in this apartment. For the past two weeks, I’ve been loading up on leafy greens in my smoothies, no matter which color they turned out! (Check out my instagram account for some particularly disturbing results, such as my BLACK smoothie!) When my sister came to visit for breakfast the other day, however, I was fed up with greens for breakfast. I therefore made a  sunshiney, pretty yellow, vitamin C-loaded smoothie that’ll get you high on its citric, lightly bitter yet amazingly sweet and creamy taste!

Crispy Oat-Thins With Vegan Homemade Banana Milk

Oh my gawd, people, I’ve outdone myself. I just made THE most amazing crispy oatmeal cookies in the universe…and my judgement may very well be clouded by the iced homemade banana milk spiced with lots of cinnamon that I am sipping on, dipping my cookies in and stuffing them into my mouth whole. I am literally the cookie monster right now, and in dessert heaven.

Nutty-Crunch Comfort-Oatmeal Bowl

I am so amazed by my toasted almond butter, I can’t even begin to tell you. I haven’t had the chance to try it spread out on bread, as I was kind of full of it after I had made it (someone had to lick the spoon…and the bowl…and the spoon again), but I slopped a spoonful on my oatmeal yesterday morning – and I truly don’t know why I haven’t tried nutbutter in my cereal before! It just adds this wonderful creaminess, and works especially well with this specific oatmeal bowl:

Monster Oatmeal Raisin Cookie-Cake-Pillows

I had cookies for lunch today. Or, well, maybe some would call it cake. Or something in between. I am not really sure how to describe them, but I think it may be more interesting to know why I had cookies for lunch? Honestly, I am not sure, I think I just skipped lunch and ended up hungry at 2pm, so I figured I might as well pretend it was tea time and made myself some freshly baked cookies. Fair enough, right?
